Lemon balm leaves have a delicately citrus scent, very green and velvety to the touch, they immediately release their aroma. They are very fragile and more sensitive than other botanicals to heating and fermentation, for this reason they must be immediately dried in a well-ventilated environment or quickly distilled. Their essential oil is expensive, much more than the absolute, but it has characteristics that make it special in cosmetics. In liqueurs, the absolute is preferred, which gives a special taste to the distillate and to alcoholic and non-alcoholic drinks
