Olive leaf not treated with pesticides is harvested in its maximum balsamic period and cold macerated in solvent. At the end of the processing we obtain a creamy product with an intense green in which the scent of the olive tree is dominated by that of blackberry and red fruits. Perfectly soluble in alcohol, it leaves no residue in the container and is particularly used in the formulation of liqueurs
